Cooking red meat to well not only destroys the flavor (in my opinion ... though basically raw isn't necessary for taste
) it also makes the meat less beneficial for your body.
That aside ... I am more and more careful about the food that comes into our home. The closer I can get to truly natural, the better. Our food in this country has become less and less healthy and riskier and riskier. It's scary, to be sure. We aren't full organic but we're very careful. Beef in this house is organic and grass fed/finished as much as possible. Heck, I'd fully switch us to wild game if I could. The kids LOVE venison ... even as the meat for tacos or their steak.
