MrsB said:I've tried meatless Mondays here and it doesn't fly. LOL MrB is a meat and potatoes kinda guy.justgettingby said:Creamy Carrot Ginger soup (from Skinnytaste) for a Meat free Monday. I always switch it up bit and add a sweet potato and some curcumin as well. It's a soup for what ails you and DH and I have been ailing for a few days. Fresh Mango for dessert.
Here's my favorite meatless go to: http://www.chow.com/recipes/28024-mushroom-and-chile-tacos#!
I like this best as a burrito; layer brown rice prepared Chipolte style, black beans, mushrooms, lettuce, cheese. OMG I love, love, love it. Of course these mushrooms could be eaten by themselves. LOL I don't add the pablano chile and I use red instead of white onion.
I like veggie egg rolls better! And what time shall I be at your house?MrsB said:Yep! Why didn't I think of that???? )deewee said:Veggie egg rolls?MrsB said:)Blazing Saddles said:Too squeaky for me.......honeybunny said:Y'all need to try that Rusty Chicken... it is delicious.

That looks excellent! I'll definitely be making that one. Portabellas aren't cheap here but I do splurge on them once in awhile.
Yum! We're having spaghetti, too. It's cold out and I want comfort food. And I forgot to cook the rice. So, it's whole wheat organic pasta with organic tomato basil sauce for BabyB and me, and a meatball sub for MrB. (He doesn't eat spaghetti and I don't eat frozen prepared meatballs! LOL)LisaC said:We decided to let the princess pick and she chose The Varsity last night. Tonight, I'm making sausage and peppers with spaghetti.

justgettingby said:I made Avocado and Mango salsa for our weekly Mah Jongg group today. Figured I'd try it on them first, plus it's Mango season so very cheap as well. OHHH MMMM GEEEE, it was GREAT! I then grilled chicken and added the leftover salsa on top with some cilantro and green onion for garnish for dinner. To friggin' die for!!!! And so easy.
