I like this best as a burrito; layer brown rice prepared Chipolte style, black beans, mushrooms, lettuce, cheese. OMG I love, love, love it. Of course these mushrooms could be eaten by themselves. LOL I don't add the pablano chile and I use red instead of white onion.

That looks excellent! I'll definitely be making that one. Portabellas aren't cheap here but I do splurge on them once in awhile.

We decided to let the princess pick and she chose The Varsity last night. Tonight, I'm making sausage and peppers with spaghetti.

Yum! We're having spaghetti, too. It's cold out and I want comfort food. And I forgot to cook the rice. So, it's whole wheat organic pasta with organic tomato basil sauce for BabyB and me, and a meatball sub for MrB. (He doesn't eat spaghetti and I don't eat frozen prepared meatballs! LOL)

When MrB and I were in Cabo, we took our freshly caught Dorado (Mahi Mahi) to The Anchor and Arch at the marina and they blackened it and made a fresh mango salsa that seriously made me cry. Fresh mango salsa is the best. (As a side note, we threw almost everything back, and donated what we didnt throw back to the local soup kitchen. The co-owner was also our captain and he had worked closely with the soup kitchen for years. This we knew in advance and is why we chose him. All billfish were released.)
