Meals for sick friend

Help me!!! I need more ideas! Lol This week I'm doing the chicken broccoli bake from NG, with rice pilaf, homemade rolls, and a salad. Also going to do a pan of enchiladas with Mexican style rice and "ensalada".

Im doing 1-2 meals a week. 2 when we have the funds - everyone else has stopped taking meals. They only participated the first two weeks. :(

I've done something similar to this before, I copied this recipe from somewhere but it is yummy!! I don't do much rosemary, it's overpowering so I wouldn't use it. Are you not seeing all the recipes on FB??

Oven-roasted sausages, potatoes, and peppers

this recipe will serve 3-4 adults, or one bachelor again and again.

kiddo alert: should be good to go.

get it:
?1 package (at least 1 lb) of your favorite sausage links (johnsonvilles, evergood, generic smoked sausage, whatever you like. i used polish sausages, 4 to a pack)
?4-5 decent-sized potatoes (i prefer yukon gold or red bliss)
?1 small jar banana peppers
?1-2 bell peppers, sliced
?1 large onion, sliced
?3 tbsp olive oil (yes, it has to be OLIVE oil)
?salt & pepper
?*optional — 2 tsp dried rosemary (bachelors, ignore this. your salt and pepper will be fine. i know that asking you to procure olive oil was already a stretch.)
?*optional — 3 tbsp creole seasoning

make it:
1.spray a large baking pan w/ nonstick spray (make sure there is at least a small “lip” that provides a “side” to the pan, don’t use a flat baking sheet.
2.slice sausages into thin rounds, about 1/5? thick. if you know how to slice using a “bias” cut, do that. if not, don’t worry about it.
3.cut potatoes into 1/2? chunks
4.slice onion and pepper into strips
5.place all ingredients on baking sheet and drizzle oil over. use your hands to toss everything together in the oil, making sure everything feels coated.
6.add salt & pepper and spices (if using)
7.top w/ sliced banana peppers
8.bake at 400 for about 30-35 min, until potatoes are tender
9.EAT

Thanks! I'm not seeing many on FB, and the ones I am seeing aren't easily transported, lol. Plus I like to use recipes people have tried and like.

Do you use creole seasoning? If so, do you use that much? 3 tbsp seems a lot. I only use 1.5tsp of Tony Cachere's in my red beans and rice...

There's a website called "Take them a meal" that has wonderful recipes and suggestions for meals that travel and freeze well. You may get some ideas from there.

(And that broccoli chicken recipe sounds good!)

I need to look that one up! Thanks for sharing it! :love

No creole seasoning, in fact just salt and pepper.

I may be repeating myself.

Mexican lasagna.

Package of flour tortillas
Basic chili recipe - I make mine with a large can of crushed tomatoes, a pound of ground something (turkey, meat, bison, etc), and a couple of packages of taco/chili seasoning, can of black beans. Cook just like chili.
Package of grated cheese (if you like cheese, make it two packages)

In a large casserole dish, put a layer or tortillas - feel free to rip them up to fit. Layer of chili, then cheese. Repeat, make sure to finish with a layer of cheese.

Bake at 350 until it starts to bubble in the middle.

Yum, thanks, Mac!!

UM, I'm taking that for my next meal on Sat. Enchiladas and a big pan of Mexican rice.

You know, I'm feeling a bit sniffly and might be coming down with something... A casserole sure sounds good... :whistle :whistle :whistle :whistle :whistle

Oh no!! I see an epidemic starting! Mrs. B - you're going to need some extra groceries, sister!!!

Have I mentioned how much my back hurts and how hard it is for me to stand for long periods of time? :whistle

I'd give you my salsa recipe .... but then they would never let you go after delivering some.

This last batch is my best!

I made deewee's smoked sausage and potatoes tonight. And I showed my daughter how to make a "dream pie". :D

If you need some spices, just let us know.
(we don't cook, but we do stock spices in case of Armageddon)
