Meals for sick friend

My neighbor is very ill, and will be receiving chemo from now until the end of October. Some of the folks in my neighborhood are going to try and provide a meal one night a week. I've signed up for a meal next week, but I need ideas for more.

Anyone have any ideas, recipes, etc? Things that will travel well and/or freeze well. It's a family of 5.

Lasagna or baked spaghetti is always a good, filling and welcomed meal. Any casserole should be fine. Or you could cook a ham and slice it for them.
 
Ham is a good idea! Hadn't thought of that! I've signed up for spaghetti/salad/garlic bread, and someone else has signed up for lasagna. Ill do a baked spaghetti later down the road...

I've been driving myself crazy trying to think of a casserole, but I haven't made any in so long. Do you have easy, cheap, but still good recipes???

Broccoli casserole with chicken and rice is yummy. Hang on, let me check my recipe file. :D
 
Here's a cracker barrel recipe

Cracker Barrel Broccoli Cheddar Chicken
• Author: CopyKat Recipes
• Recipe Type: Casserole Recipes, Copycat Restaurant Recipes, CopyKat Recipes, Chicken Recipes
• Prep time: 10 minutes
• Cook time: 45 minutes
• Serves: 4

You can make this broccoli cheddar chicken bake, and it will taste just like the Cracker Barrel.
Ingredients
• 4 boneless skinless chicken breasts
• 1 can of Campbell's Cheddar Cheese Soup
• 1 cup milk
• 1 1/2 cups Ritz Crackers (one sleeve)
• 4 tablespoons of melted butter (you can use more)
• 8 ounces frozen broccoli
• 4 ounces shredded cheddar cheese
• 1/2 teaspoon seasoned salt
Instructions
Preheat your oven to 350 degrees. Make can of Cheddar cheese soup mix according to package directions (one can of soup mix to one can of milk). Place chicken breasts in a baking dish. Season with seasoned salt. Pour 3/4 of the prepared soup over the chicken breasts. Add broccoli to chicken that has been covered with the cheddar soup. Melt butter and combine with Ritz crackers, sprinkle buttered crackers over the broccoli. Add remaining soup mix, and bake for approximately 45 minutes or until the chicken is done. (Check chicken by cutting the thickest part and look to see that the chicken is uniform in color). When chicken has been removed from oven sprinkle with shredded cheddar cheese.
 
I am the queen of Honey Baked Ham... Deaths, illnesses, covered dishes, holidays, etc. I'm assuming folks like them, no one has ever told me NOT to bring one over or send one...

Nah, for you, I promise to just grab a couple of bags of celery. I'll get your Sugar Daddy and youngun a HB ham and tell them to hide it from you...

There's a website called "Take them a meal" that has wonderful recipes and suggestions for meals that travel and freeze well. You may get some ideas from there.

(And that broccoli chicken recipe sounds good!)
