Hashbrown Casserole

I made a pan full this weekend, thinking the boys would love it. They turned their little noses up at it & wouldn't even have a little taste! Weird kids...they'd never heard of it before.

Meal fail. :(
 
Awww. I can't believe they wouldn't even try it. I've never had it before but I'm curious to try it. What's the recipe?

2 lb bag of hash brown taters
1 pint sour cream
1 can cream of chicken
1/2 onion, diced
2 c grated cheddar cheese

Mix together and bake in a 350 oven for about 45 min. (I let mine cook closer to an hour)
 
So you bake it covered? I wonder if it's be good with bacon or ham? Hmmm...
Do you serve this as breakfast? LOL sorry for 20 questions.
 
Sounds like a breakfast casserole I make. Bunch of eggs, frozen hash browns, sausage, ham/bacon, chopped green onion, and cheese.

Bake uncovered. I guess you could add anything to it. I served it as a side dish, like Cracker Barrel does. I really liked it. I've had it when I've gone out, but never made it for M and the kids before. Marc loved it too. Marc and I ate some of the leftover for breakfast the next day. It was yummy!

I've made that before too. It is delish!
 
Don't feel bad. I did meatball subs tonight. I forgot the hoagie rolls, so we used hotdog buns. Just FYI, the buns were a fail. :dunno
 
I have a kid who loves potatoes… mashed, baked, fried, skins, twice baked, hash browns, tater tots, in a casserole... . HOWEVER he refused to eat potato salad!

So, funny thing happens this summer. We go to a friend’s lake house with my brother’s family. (Four families, 18 people) My brother’s a tall guy and you do what he says … partly because you don’t want to find out what he will do if you don’t do it :Ninja ... partly because you know what he has done in the past. :Ninja

My brother and Sister-in-law had gone to Wal-mart and bought food for everyone for the time at the lake.

Lunch on the second day was burgers, chips, and potato salad. (Sister-in-law and I were not there for lunch.)

Apparently everyone served themselves. After cooking the burgers, my brother goes to fix his and sees that there are still 2 tubs of potato salad that no one has taken any. Soooooo, he tells the kids they better serve some for lunch or that will be dinner. My 17 year old served himself a nice big scoop and ate it. Now remember I was not there.

Two weeks later, we are in Aldi’s … 17 year old said, “Oh, this is the potato salad we had, it was good, can we buy some?” So I’m having a twilight zone moment… who took my kid, and what did they do to him?

I said, “Since when do you eat potato salad?” He says, "Well I don’t, but I found out I like the mustard potato salad."

I said, “When did you find out?” So he tells me the whole story!

I don’t know if I’m more pissed that he always said he hated it after he had the “no thank you servings” I always made him take, or if I’m more pissed that I did not just tell him 14 years ago, you don’t eat a regular serving , you will have that and only that for dinner! :tapfoot2 :BH

I'd have been happy just eating a couple of meatballs. I'm not super picky & nothing has to be "just right" for me. Marc & kids...that's another story. LOL

It's what I make too... but to be honest I had not made it in years.

Since the kid was willing to eat what he found at Aldis, I bought it. He said it was stronger than what we had at the lake, a little too much mustard and pickles, but it had the right flavor ... he ate most of it by himself.

Potato salad is so inexpensive to make, I won’t buy it now that I know what flavor and how strong he likes it.

It is something you can make in advance ... and unlike mashed potatoes it is good a day later - so I am thrilled the little ding-dong finally came to his senses. ::)

It never made sense that he would not eat potato salad; yet when he would come home from school, and take left over baked potatoes, or mashed potatoes and stir in cheese, bacon, ham... sometimes hot - sometimes cold – he just loved potatoes!

Kids are funny eaters. I think they just get an idea in their heads that they don't like something and stick with that til they have to try it. Marc, my big hid, is still that way. :))

I would never try potato salad until I was a senior in h.s. in our foods class and a classmate talked me into trying a bite and it tasted better than I thought cold potatoes and cold mayonnaise would. lol
 
btw I have made the hb cass before and it was quite tasty. I have also made the breakfast cass that includes sausage, eggs and has browns and it was good also.

You know it might be just that. He talks about how gross mayonnaise is ...and yet the only salad dressing he likes is Ranch...which HE makes with milk, mayonnaise, and the packet of Hidden Valley!? :dunno ... And he has a big salad after school several times a week. :laugh

My son doesn't like meat and potatoes together, loves them separate, but not cooked together. So, no pot roast with potatoes and carrots for him. Ahem, one of my favorite meals.


And potato salad is awesome! But the store bought kind, not so much. so, I can't believe he liked that.
 
I love Hashbrown Casserole. If you've ever eaten the potato casserole at Cracker Barrel, you've eaten deewee's dish. :)
