Summer Dessert Suggestions

I need some summer dessert suggestions. Something very light and preferably quick and easy.

Not "very" light but the ole standby of lemonade concentrate, cool whip, condensed milk in the graham cracker pie crust is painfully easy, cool, tasty, refreshing, etc.

Mixed berries
 
Angel food cake cut up, layer with berries, and real whip cream, NOT COOL WHIP, disgusting, makes a nice light dessert. :D
 
So I was doing a little searching to find some recipes and I found ...

WHISKEY MOUSSE
Yields: 6 servings

• 1 cup heavy cream
• 1/2 cup honey
• 1/2 cup whiskey

Whip cream until it forms soft peaks. Be careful not to over whip, or the cream will turn into butter.

In a separate bowl, combine the honey and whisky. Fold gently into the whipped cream.

Fill 6 margarita glasses and chill until served.

Serve with cookies.

Other ideas: Maybe Bailey’s Irish Cream will do!

I do this with; Godiva, Kahula, brandy, and numerous other things. Sometimes I freeze it or others I use it as the topping. I do not use honey though. I use flavored syrups like Torani, or DiVinchi.
 
These all sound deliciously refreshing but we will be entertaining Southern Baptists so I won't be able to serve alcohol.

Thank you for your input thus far and I would appreciate any more suggestions out there. Nothing sounds good to me this summer except for a glass of ice so I am just stuck. :(

There is no alcohol in our first two. We waited to bring that out until our third post!! :laugh
 
Fruit Pizza

Ingredients

* 1 cup all-purpose flour
* 1/4 cup confectioners' sugar
* 1/2 cup cold butter
* 1 package (8 ounces) reduced-fat cream cheese
* 1/3 cup sugar
* 1 teaspoon vanilla extract
* 2 cups halved fresh strawberries
* 1 can (11 ounces) mandarin oranges, drained
* 1 cup fresh blueberries
*

GLAZE:
* 5 teaspoons cornstarch
* 1-1/4 cups unsweetened pineapple juice
* 1 teaspoon lemon juice

Directions

* In a large bowl, combine flour and confectioners' sugar. Cut in butter until crumbly. Press onto an ungreased 12-in. pizza pan. Bake at 350° for 10-12 minutes or until very lightly browned. Cool on a wire rack.
* In a small bowl, beat the cream cheese, sugar and vanilla until smooth. Spread over crust. Arrange the strawberries, oranges and blueberries on top.
* For glaze, in a small saucepan, combine the cornstarch, pineapple juice and lemon juice until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Cool slightly. Drizzle over fruit. Refrigerate until chilled.
 
I also do fruit Kabobs.
Skewer fruits on a bamboo stick.
Serve with different dips. Lemon lime Dip, Caramel, Chocolate, Flavored Cream cheese.....
Easy, quick, healthy, and you do not have to turn on your oven. :)

LMAO. Reminds me of a fire pit party I had one winter. One of my guest, who is a member on here and KNOWN for bringing jello shots to a party, brought a cooler full of them. Another one of my guest who does not drink, did not realise they were loaded with booze. She was eating them up, and about forty minutes later was giggling and dizzy as all get out

Another old standby that works really well this time of year with all of the fresh produce ... fresh fruit salad in a watermelon boat.

And what's that other thing called ... blueberry cloud? Or something like that. Graham cracker bottom ... blueberry pie filling ... whipped cream/cream cheese topping ... light graham cracker crumble over top. Yummers.
 
Mexican honey watermelon


chopped up watermelon , Strawberries, Fresh chopped Cilantro, Add a few table spoons of honey and sugar to taste.

Let chill in the fridge and your good to go...it is soooo yummy
 
Whatever happened to ice cream? How hard is that to scoop out of the container into a bowl? It's easy as heck!

Remember nepolian ice cream? My grandmother would always have that in her freezer form us youngins. One time I told her I hated strawberry ice cream, and with a stern voice told me not to cross the fine line over the chocolate & vanilla line, and I would be just fine. Glad my other cousins liked the strawberry. I didn't.

My Mother & Aunt drove 50 miles to a cousin's wedding on a hot, humid summer southern Illinois afternoon. When they arrived at the reception they were parched and made a beeline to the punch bowl. I believe it was about their third cup of punch that they realized the presence of alcohol. They immediately asked for some ice water. So funny to me. :laugh

Honest to goodness I thought about that this evening. Just a scoop in a lovely dessert dish and a couple of small cookies.
