Caveat: I grew up on a farm and we grew our own beef. I was in college before I had a steak in a restaurant, and I just about died at how awful it was compared to our home-grown beef. So anyhoo, I know beef. I'm a beef snob, you might say. I'm also an excellent cook (although my mother is a stupendously fantastic outrageously awesome cook).
All that to say that I like my steaks well done, but not dry. I do not want to see any pink. I also like steak sauce (but only as an accent). I know it's not fashionable, but there it is.
Also - the bison I've had at Ted's Montana Grill is as good as the best beef steak I have ever had. I believe the most they'll cook that is medium well. :mouthwatering:
