Here's my recipe for Party Potatoes (aka Hashbrown casserole)

PARTY POTATOES
32 oz. pkg. frozen hash browns (slightly thawed)
1/2 tsp. salt
1/4 tsp. pepper
1/2 c. chopped onion
1 can cream of chicken soup
2 c. sour cream
1 c. grated cheddar cheese
1/2 c. butter
2 c. crushed corn flakes
Mix first 7 ingredients together and place in a 3 quart casserole. Melt butter and mix with corn flakes. Put mixture on top of casserole last 20 minutes of baking time. Bake total of 1 hour at 350 degrees

2 lb bag of hash brown taters
1 pint sour cream
1 can cream of chicken
1/2 onion, diced
2 c grated cheddar cheese

Mix together and bake in a 350 oven for about 45 min. (I let mine cook closer to an hour)



My family would actually like that, but I just can not bring myself to use "cream of" condensed soups. Is there a way to do the recipe without using the soup?

Sure, you could make a chicken gravy with flour or corn starch instead of the soup. Tater tots work great with this, too. Omit the onion and leave the tater tots kind of together. Don't break them up too much.

Thank you! I can do that. I was thinking this for just the two of them would work great as a breakfast add on, or a side for dinner, and last a few days.
 
Shoe Diva, my recipe makes a big batch, 9 x 13 pan full. If you are just doing it for the two of them, I'd cut it in half.

I don't use cream soups, either. I usually just make a white sauce and add a fresh or organic ingredient to make the sauce the flavor the soup is supposed to be--celery, mushroom, organic chicken broth, etc.

Spam is nasty. Growing up, spam was usually served for dinner and one of the things my father loved. Another was potted meat. :sick
 
There are a lot of recipes to make your own, so that you don't have to use the "cream of" soups. Those soups have so much crap in them.

Yes, this is true. I've made my own before, but I can't remember how. It's been awhile.
