Okay, I'm trying this again since Charlie ate half my chicken last time. LOL

I cooked a 5 1/2lb chicken in the crock pot yesterday. I rubbed it with prepared mustard, then a mixture of kosher salt, paprika, coriander, garlic powder, onion powder, and pepper. Yum!

After dinner (Charlie got none of the counter, but I gave him some bites) I picked the bone and tossed all the bones back in the crock pot, added 6 cups of water and cooked it on low overnight. I have a bunch of yummy stock this morning!

So tonight's dinner no. 2 is going to be a thick chicken noodle soup. I have no recipe for this, but I'm going to make it up as I go. LOL

I haven't decided on meal no. 3 yet...

ShoeDiva, thanks again for the coffee ground tip! LOL This broth is good, but man it smells bad first thing in the morning.
 
Oops, forgot to add: the cost for this is about $7 for what will be three or 4 meals. Excluding spices, of course. I already have those on hand.

That is great. I am a bit weirded out by bones, so I just buy boneless meat. :( It costs so much more and you are definite doing things right, and getting a better deal, by getting 3 meals out of one chicken.

I know, I was the same way. The bones gross me out. But, I've gotten to where it doesn't bother me as much. I like the flavor. And I like the taste of homemade stock much more than the canned or boxed. And, bones aside, it's fun to cook from "scratch".

But y'all won't catch me going to far as killing my own chickens any time soon. LOL I am not my Granny.

I make everything I can from scratch. It is fun and so much better for your family! I hardly have any boxed items because I do not like all the processed foods. BUT I have tried and just can not get past the bone thing. I will have to continue with the boxed stock. :sigh: Though, again, since I buy the organic, no preservatives, you win on frugal! :))

If you really want to go all out from scratch, make some home made egg noodles to go in that soup. The flour from the noodles will thicken the broth as you cook them. Oh yea, the bones are where most of the flavor is. I'm thinking that chicken stock is very good!!

Here's a recipe for them, I use whole eggs for all of it, not just the yolks. Don't forget to let it rest about 1/2 an hour or so before you roll them out. It makes them much better.

Cutting them is easier than the instructions here. After you have rolled them out, put a lot of flour on top and roll it up like a jelly roll, then cut each one and unroll it. They are more uniform and easier to handle. I don't wait for them to "dry" out, I just cook 'em. lol
 
No, I've never seen it, and I don't plan to, either. :laugh

My great grandparents (Granny and Pa) grew their own food, and raised their own animals for slaughter. It wasnt until they were much older that they stopped, but still bought their meats locally raised and butchered. I was lucky enough to know them both, and even MrB met my Granny several times. She passed away about 7 years ago.

Thanks! I may try this, though I don't know if I'll be able to today. It will depend on the mood the kiddo is in. I have some egg noodles I may use. Not homemade, but it's what I have on hand.

Thanks! I may try this, though I don't know if I'll be able to today. It will depend on the mood the kiddo is in. I have some egg noodles I may use. Not homemade, but it's what I have on hand.

I edited that post about rolling them out, they do need to be thin. It's an easy recipe.

One time I jokingly told her that I have never seen a boneless chicken flopping around the farmyard.
She will decline any invitation that includes ribs as she cannot watch other people eat them... weirdo.

I am fixin to make a big casserole dish of chicken broccoli alfredo rice:

Just butter up a big glass dish
make a basic alfredo sauce with garlic
add your favorites herbs or spices
add some chicken n fresh broccoli
bake until yummy creamy doneness


(I substitute the rice for fettucine cause
our sweet daughter has digestive issues.)

This cracks me up! It's not as though people are actually EATING the BONES! :laugh They're just eating the MEAT off the bone.

Of course, I can't talk....friends may or may not have to make dishes with "corners" of them that don't have cheese. :whistle

Yum! That sounds good! I think I may do something very similar. I don't have any cheese for an alfredo. I refuse to go to the store again this week. LOL I do have lots of fresh broccoli, so I may use whatever stock is left and make a creamy sauce for a basic chicken casserole. I have heavy cream - which is unusual. LOL
