ShoeDiva - Kielbasa & Sauerkraut Soup/Stew

1-2 lbs kiebasa sausage, cut into about 1" lengths
1 tsp butter
1 meduim oinion, cut in wedges
2 16oz cans sauerkraut (undrained)
1 to 1-1/2 cups apple juice
2 medium apples, cut in wedges skin on
4 - 6 potatoes, cubed or quartered ( half of these I use sweet potatoes to add color)

Brown kielbasa in a heavy stock pot in butter. Add apple juice, layers of onion, potatoes, apples, and sauerkraut. Simmer on stove top for about 40 minutes or until the potatoes are done.

Serve with corn bread

Optional: When done sprinkle with a little brown sugar and/or celery salt to taste

Thank you!!! I know my husband will love this. I will get the ingredients this weekend and post what he thinks. :)
 
Though I prefer mild sauerkraut, it still gives me gas. I think I'll have some and then go see RNG at the office!
