Baked Potato Leftovers

I always bake a couple of extra potatoes so I can use them in a frittata, hash browns or potato soup. After they have cooled to room temp(with skins still on), I place them in a resealable plastic bag and put them in the frig. Within a couple of days I will use them.

How do you use leftover baked potatoes?
