Even though it was rather warm yesterday, I really wanted to try this recipe in my Kroger coupon mailer. I made it a little different, so I’ll post my way, too. Anyway, it was soooo good and easy. I already had most of this stuff, and still had some broth left from the last good Progresso sale. I wanted to share with y’all ‘cause it is so easy!
Veggie Tortellini Soup
6 cups of Chicken or Veggie Broth
½ small sweet onion, chopped
2 garlic cloves, chopped fine
¼ cup prepared pesto
2 cups mixed frozen veggies
1 tbsp butter
1 9oz bag of frozen tortellini
Chop onion and garlic, and sauté in butter until onions are clear. Add broth and bring to a boil. Add tortellini and cook 1-2 minutes less than directions state. Add veggies. Return to a boil and then stir in pesto. Serve.
I followed the directions but used a whole bag of frozen veggies (carrots, broccoli, cauliflower, zucchini, red peppers, green beans, lima beans) and a 19oz bag of tortellini. I also only used 3 cans of chicken broth, which is about 5 ¼ cups.
