What do you make for 30+ people?

Sweet Potato Soufflé!



My hubby makes this in the Winter at many of the get-together dinners that we have. It is an often-requested side! (He does not use the optional raisins in it...and he has added apples to the topping on occasion, and that is wonderful too. Just double or triple the recipe.

3 cups cooked fresh sweet potatoes, peeled if baked, drained if boiled. (Hubby found that making 1-inch cubes of sweet potato, then boil in water until soft.)
3 eggs
1 stick melted butter
½ cup whole milk
¼ cup light brown sugar
½ cup granulated sugar
¼ cup raisins (optional)
¼ teaspoon cinnamon
1 teaspoon vanilla extract
dash of nutmeg

1 cup corn flakes cereal
½ cup light brown sugar
1/3 cup melted butter
¾ cup chopped pecans

Directions:
1.Preheat oven to 350 degrees.
2.Mash sweet potatoes with a whisk or potato masher. (Hubby found that making 1-inch cubes of sweet potato, then boil in water until soft, then putting them in the KitchenAid mixer to mash and whip them made them not stringy and a nice texture.)
3.Combine them with all ingredients .
4.Pour into a 9x12-inch casserole dish and bake 25-30 minutes.

I never thought of it this way until my brother said he wished his wife baked, that she did not need to cook, but it would be nice if she baked. I said what do you mean by that?

He said like pies, cakes, and cookies... maybe some bread. Then I realized I preferred baking to cooking... I had never separated the two.

My mom was a mom who baked a lot. She cooked too, but I think she was a better baker.

When mom goes to my brother's house, she bakes for him. She is so happy to do it ... and he loves it. She stays for several months so there is plenty of time to spoil him. Last year he added chickens to the farm, so she called up asking what she could bake to use up lots of eggs. We found a few recipes ... but I think it is easier to make friends by giving away eggs! :thumbsup

Here's the good news. No matter what you make, you don't have to have a full serving for 30, even if there are 30 there. No one will eat everything. Those that do like everything won't have room on their plate for everything. :))
 
This is very easy and everyone seems to eat it up. One recipe serves about 10 so you'd have to 3x it. Probably doubling it would be enough, as Madea said not everyone will be able to eat everything.

This is similar to Cracker Barrel's Hash Brown Casserole. I sometimes use Tater Tots instead of frozen shredded hash browns.

PARTY POTATOES
32 oz. pkg. frozen hash browns (slightly thawed)
1/2 tsp. salt
1/4 tsp. pepper
1/2 c. chopped onion
1 can cream of chicken soup
2 c. sour cream
1 c. grated cheddar cheese
1/2 c. butter
2 c. crushed corn flakes

Mix first 7 ingredients together and place in a 3 quart casserole. Melt butter and mix with corn flakes. Put mixture on top of casserole last 20 minutes of baking time. Bake total of 1 hour at 350 degrees.
