What are some of your favorite hot summer weather meals or snacks ? ? ?

We do a lot of salads with grilled chicken or steak on top for dinner.
Some cold pasta dishes and I love to make fresh guacamole n chips.

All kinds of quesadillas... easy quick dinner for lazy summer nights.

Summer beer is good on a humid Georgia afternoon and all the kiddos enjoy
frozen strawberry pie or frosty cold root beer floats on hot summer evenings.


Please spill some of those cool summer recipe ideas... 8)

2 cups vodka
4 Coronas
2 cans frozen limeade
water and lots of ice

Diva has the SAME recipe. Except she substitutes vodka for the Coronas, limeade, water and ice.

My favorite summer dishes are simple - BLTs with home grown tomatoes. Watermelon and fresh veggies of any kind are also yummy!!

Ohhhh! Wow, that sounds pretty good. I've never heard of vodka and corona. I have seen the tequila and corona stuff. I may have to introduce this drink to my wife. Thanks for the recipe!!
 
Last year, one of my wife's oddball freakshow friends(she has a few of those) introduced me to caprese salad which was very simple yet a very nice summer treat.

Oddball maybe. But a freak show I am not!! Well, not completely.

Sounds pretty good. I'm a little leery on the mango also though. I hear its really good but I've always been scared to try it.

I'm highly allergic to mangoes so I can't have it. But, they are very yummy!!
 
I love a good gazpacho soup, sadly I have no idea where to get one.
