Spring Potato Salad

Spring marks the beginning of potato salad season at our house :

My MIL taught me to make potato salad and I have tweaked
her famous recipe over many years to make the perfect mix.

My family has been known to eat big bowls of
any rare leftovers the next day for breakfast.

What recipes or dishes mark the start of spring at your home ? 8)
 
Yeah, HB.............where's the recipe??

Ours is salads, any kind of salads................with or without lettuce, with or without tomatoes..............I just love raw vegetables. :)

We do a lot of salads too. We really don't have any recipes that we just use during the spring.

the ingredients... most of my cooking is based on taste testing and repeated experimentation.

I can try to give approx recipe but you will
have to adjust amounts to your own taste :

6 large potatos
3 hard boiled eggs
1/2 cup fine diced sweet onions

(make sure potatos are not too mushy
and must be CHILLED before dressing)

Dressing :
3 smashed egg yolks
1 teaspoon fresh garlic
1/2 cup or more Hellman's mayo
1 Tablespoon yellow mustard
2 or 3 Tablespoons Marzetti Slaw Dressing
2 or 3 Tablespoons dill pickle juice

Sprinkle top of salad with smoked paprika.

Yum, that sounds good! I may try this. Though without mayo. You'd think MrB and I were raised by a pack of wild animals - we only use Miracle Whip in my house. We were raised by a bunch of yankees! :laugh

Actually... my MIL does use Miracle Whip.
(her recipe is a little sweeter than mine)

I just prefer the more tangy mayo... 8)

Duke's is best, and the low-fat variety is a winner!!!!
