I need easy dinner ideas!

I'm with Mac on his idea. There ya go "easy Mac n Cheese". Easy idea is chicken quesadillas. Get some flour or corn tortillas, spread some shredded cheese, canned chicken, jalapenos, chopped black olives, etc. Fold it in half and lightly toast both sides in a large skillet with olive oil. I use flat tortillas to make a wide variety of wrapped samiches. Also, on the go breakfast protein.....flat tort, spread peanut butter and thin sliced banana, roll it up!
 
Turkey and Balsamic Onion Quesadillas

4 quesadillas
Cheddar cheese
Small red onion
Thin sliced smoked turkey
1/4c balsamic vinegar

Thinly slice onion and marinate in vinegar for 5 min. Drain. Spray tortillas with cooking spray, lightly on each side. Slightly toast one side on a griddle or non-stick frying pan, flip. Add cheese (whatever amount you like, layer 4 pcs of turkey on half of tortilla and onions on te other. Fold. Continue cooking, flipping every minute or so until toasted to your liking and cheese is melted.

We had this tonight and it was good! Took 10 whole minutes. Ate it with the left over pasta salad from Saturday's cookout.
 
My husband loves crock pot ribs. In the morning, toss ribs in the crock pot and cover with your favorite BBQ sauce. Cook on low all day. Then you just heat up some veggies sine it'll be done when you get home. They are good, but I'm not big on ribs.

Yes. I usually find it in the section where Castleberry's Hot Dog Sauce & Red Devil canned meats are. You can always make your own BBQ'd meats but then that negates the "easy" part. :D
LOL. I was just asking because I had never seen it. (I was glad RNG hadn't either!) I do not eat beef or pork. (or creamed corn either! :)) )
Many of my meals are semi-homemade. I don't care for cooking, so the easier I can make it on myself, the better. :)

Sounds really good! I love veggie quesadillas (wish M did too) and used to make them all the time. I just used lightly sauteed mushrooms & onions, cheese, black beans and salsa. Yummmmmmy

but you do make some awesome potatoes...not sure what you called them..but those dang little cubed taters are YUMMY! ;D

Thank you! Those are easy too! I call those my roasted taters. I need to make those soon for M & the kids cuz they really love them too. And they re-heat very well!

Dice about 5 potatoes & 1 large sweet onion (could use more onion if you like). Throw in a casserole dish, put a few pats of butter on top, then season with salt & pepper to taste. Cover with foil and bake on 375-400 for about an hour. Yum Yum Yum!

I love to make pot roast in the pressure cooker. I can have an amazingly tender roast and veggies done in about 45 minutes.

I love ours. I can pull the pressure valve off as soon as I'm done cooking and let the pressure release quickly. This comes in handy when I'm cooking a pot roast because I can add the potatoes and carrots at the end and bring it back up to pressure quickly - it takes the potatoes and carrots about 6 minutes to cook thoroughly.

I like to keep already prepared meats in the freezer and then you just get a couple of sides ready and dinner is prepared. For example, I will bake off a ham and put most of it in single meal serving proportions in a freezer bag and pop it in the freezer. Love to do pork loin in the slow cooker and portion it out too. I will use some of it for bbq pork, again using the single meal servings in freezer bag. Great to brown off 3 or 4 lbs of ground beef and do the same way and you have a quick start for a casserole.
