Homemade Banana Bread

I love banana bread! I use Paula Deen's recipe and it's fabulous!

I am using Cook's Country recipe. I never heard about microwaving whole bananas before this

I have watched that show on pbs and watched them do that recipe. Getting as much water out of the bananas makes sense. I tend to trust their recipes more than ones I just find on the internet. I know they test the dickens out of them.

In reading the instructions of the recipe… you are reducing the liquid… it should intensify the flavor.

I do that for jams… I drain the juice- separate from the fruit, and reduce it down… it makes the flavor nice and bright. It should be just the juice… no sugar. If you boil sugar and juice, the liquid browns and basically makes candy.
