Dinner!

I'm kinda nervous about dinner tonight. MrB has been doing the Wheat Belly diet and he's lost 22lbs! Jerk!! LOL

Anyway, I'm super tired of the same stuff so I'm mixing it up. We're having "tacos" and "refried" beans. Tacos are using the ground beef from Vineyard Farms, and the shell is going to be lettuce, (Taco lettuce wrap?), and homemade taco seasoning. Of course cheese and veggies. I'm also going to serve with orange bell pepper and onions. The refried beans are raw pintos I'm slowly cooking in the crock pot with seasoning, a pepper, and an onion. Ill mash them with a potato masher before we eat.

Does that sound gross? LOL

What are y'all having??
 
i did an allergy test and I am highly allergic to wheat... I love wheat .... maybe if I stopped eating it I would feel a tad better lol

Girl, you don't know what you're asking for! One of these days we really do need to get together. I miss BabyB (and MrsB!) Tonight, E has TKD at 6:15, and then I have one more tree to decorate and my village to display! Christmas is almost finished! :cheer1
 
Dinner will be at Subway tonight for us - the princess has gymnastics so we generally just grab a sandwich on the way home.

MrB has cut out all wheat and oat containing foods, and has limited diary (except cheese). He eats a lot of eggs, too. I'm trying, but I am struggling. Big time!

Just finished eating. Oh.my.word. I am awesome! This was delicious.

Hands down, this beef is the best I've ever had. Before seasoning and after. It is fantastic, and I'm not a big meat eater.

That sounds SPECTACULAR! In fact, it got me researching other lettuce wrap recipes. We make them quite often and I love skinnytaste.com's Asian Lettuce Wrap. I have to host Spanish lesson/English lesson/dinner at my house this Tuesday so I'm going to do something similar. Thanks for the idea!

Oh, and my dinner tonight is sliced avocado and scrambled eggs. We just moved so that's all we have in the house. But I'm not complaining because I love some freshly picked avocado/aguacate.
 
Question about the raw pintos...

I buy fresh/raw beans every Friday at the feria. Have you found they take a lot longer in the crock pot than dried after the overnight soak? I love buying them fresh but I don't know if I'm cooking them wrong or if it's because I live in a higher elevation where things take longer to cook in general. It's not an issue per se, but it's hard to find a lot of info online about cooking raw beans. Before I moved here, I thought they always came dried and in a bag :soashamed
 
Okay. I was wrong. I didn't use raw beans - they were dried! And to answer your question, I have no idea!!! LOL for the dried beans I usually soak over night, but these I didn't and they were perfect. Here's the recipes I used:
