My kids and their friends like these peanut butter squares. They are moist and chewy and have a great peanut butter taste! ...And they are soooooo easy!!!!!

Peanut Butter Squares

2 Cups Sugar
3 Eggs
¼ Cup Margarine
1 Cup Peanut Butter, smooth or crunchy
1 Teaspoon Vanilla Flavoring
2 Cups Self- Rising Flour


In a large bowl stir together sugar, eggs, and margarine; add peanut butter and vanilla- mix.

Stir in flour until mixture is smooth (the batter will be stiff.)

Pour into a 9 X 13 inch baking dish and bake at 300 degrees for 45 minutes, or until set and golden brown. Cut into 40 squares.

Mississippi Mud Cake
1 Cup Chopped Pecans
1 Cup Butter
½ Cup semi sweet Chocolate, Chopped (4 OZ)
2 Cups Sugar
1 ½ Cup All Purpose Flour
½ Cup Unsweetened Cocoa
4 Large Eggs
1 tsp. Vanilla Extract
¾ tsp. Salt
1 (10.5 oz) bag Miniature Marshmallows



1. Place pecans in a single layer on a baking sheet.
2. Bake at 350 degrees for 8-10 minutes or until toasted.
3. Microwave 1 cup butter and semisweet chocolate in a large microwave safe glass bowl at HIGH 1 minute or until melted and smooth, stirring every 30 seconds.
4. Whisk sugar and next 5 ingredients into chocolate mixture. Pour batter into a greased 15 X 10 X 1 – inch jelly roll pan.
5. Bake at 350 degrees for 20 minutes. Remove from oven, and sprinkle evenly with marshmallows; bake 8 to 10 more minutes or until golden brown. Drizzle warm cake with Chocolate Frosting, and sprinkle with pecans. Makes 15 servings.

Chocolate Frosting

½ Cup Butter
1/3 Cup Unsweetened Cocoa
1/3 Cup Milk
1 Box Powdered Sugar (16 oz, 1 pound)
1 tsp vanilla extract


Stir together first 3 ingredients in a medium saucepan over medium heat until butter is melted. Cook, Stirring constantly, 2 minutes or until slightly thickened; remove from heat. Beat in powdered sugar and 1 tsp vanilla at medium- high speed with an electric mixer until smooth.
Makes about 2 cups


Otis Spunkmeyer Chocolate Chip Cookies

Ingredients
o 1 cup butter softened (2 sticks)
o 1 cup vegetable shortening (Crisco Butter Flavor)
o 2 cup brown sugar, light, packed
o 1 cup granulated sugar
o 4 large eggs
o 2 Tbl Vanilla extract
o 5 1/2 cups All-purpose flour
o 4 tsp baking powder
o 2 tsp salt
o 4 cups chocolate chips (one 10-12 oz package)
o 2 cup chopped walnuts (4 oz package – optional)

Directions
1. Combine flour and baking powder in a small bowl and mix with a whisk. Set aside.

2. Melt butter in a microwave oven (use a microwave safe mixing bowl or a glass measuring cup) stopping and stirring every 15 seconds. Stop when the butter is more of a paste (usually about 45-60 seconds). Pour over granulated sugar, brown sugar, salt, and vanilla in a large mixing bowl and beat well.

3. Add each egg separately beating until creamy. Add flour mixture (1/2 cup at a time) while beating.

4. Stir chocolate chips into mixture. Refrigerate for 1-3 hours in covered bowl.

5. Pre-heat oven to 375°F 15 minutes prior to baking the first batch.

6. Drop onto a waxed paper lined, room-temperature, air-bake cookie sheet in large rounded tablespoonful size (or small ice-cream scooper).

7. Bake 10-12 minutes checking every two minutes after 8 minutes for golden brown appearance.

Thanks Far West for the great recipes! I have thought about making cc cookies with the butter/shortening mix and this looks like a great recipe to try that. I did not see where the shortening was added, is it melting with the butter? By the ingredients this looks to be about a double recipe?

That's what someone said... but I never bought school lunch...so I don't know. It came from a friend's Georgia Cooking cook book - from Kathleen Love, Soperton, GA.....?

I don't melt the butter and shortening together. Instead, I just have the butter at room temperature, or nuke in microwave so butter is room temperature.

Yes it is a double…they freeze very well. So I cook all of them and freeze.

I have altered the order just to be quicker. I gave you instructions like the original.

Here is how I do it to be quicker

1) In a stand mixer, blend the softened butter and shortening , with the white and brown sugar. At this point as it mixes, I throw in the baking powder, salt, and vanilla.

2) Stop the stand mixer and dump in the 4 eggs –all at once. Turn the mixer back on and let it get fluffy. Stop the mixer.

3) Then take the bowl off the mixer base, and put ALL the flour in the bowl.

4) Hand stir the flour in, careful to blend in the flour but not over mix- that is one reason I put the salt and baking powder into the butter and sugar phase to make sure it is well mixed.

5) Last - dump in chips, and nuts if you like them …or whatever else you like in cookies!



I think the baking powder makes these cookies chewy and soft. :love

Well, I think that is brilliant! I like to make double batches. I use a cookie scoop for my cookies and what I don't bake I go ahead and scoop them, freeze them, then put them in a resealable freezer bag and can have fresh baked cookies anytime. And sometimes I pass the frozen ones on to some friends who appreciate having them in their freezer to bake in a hurry for hungry kiddos.
 
Okay, found it! His fave candy is milky way candy bar so I will be making milky way stuffed chocolate chip cookies. (pic below) Those kids will surely be bouncing off the wall but the mom loved the idea.

lol uhm well just a cc cookie recipe and you wrap the cookie dough around the little candy bar. I'm not sure what size they are called, will know when I get them at the store. I am going to make a trial batch just to make sure they work well and let the mom have a tasting. I am going to use the recipe you posted here too! :hug

I was wondering if you could just put those mini square ones inside any cookie dough and have it work, or if there was a special way to accomplish this? I figured if you had a picture there must be instructions! ;D

My boys would LOVE this ... but I would probably only make these for a party... they do not have to be encouraged to eat cookies... it is a rather natural talent they have! :laugh

Thanks! I need all the help I can get. We just made a grocery trip today. We normally only have a couple of fresh fruit choices for the week. This week we've ended up with bananas, grapes, apples and oranges. :eek: We must have all been hungry. :)) Anyway, they have tackled those grapes! I may have to hide some of those in the freezer too!

I got the idea from a blogger and she just had the pic. She had made several variations such as reese's cups, brownie, oreos and that was her only instruction just wrap them inside the cookie dough. lol
I will def take pix. I am planning on using some of my dessert pix as wall art in my kitchen.

And this is the result. That cookie recipe is delicious Far West, thanks again! I cut this cookie in half whilst it was still warm so the ooey gooey would show a little and make a cool pic. They won't be like this for the birthday part since they will have some cooling off time.

I placed a Milky Way fun size bar cut in half in a cookie. Seems to be the perfect size for the cookie and the cookie size is a good choice for the party. I am very please with how this turned out.
