Leftover Rib Roast

Who can tell me what I can do with leftover rib roast? I can only think of cutting it into strips, freezing it and using it for fajitas. Any other ideas?

Let's see - I've used leftovers for steak sandwiches, to warm up and put on top of a salad, and taken the bones (and meat aroynd them) and made vegetable beef soup. However, none of those things happened this year because there weren't any leftovers.

Like other have mentioned a sandwich. I would cut in thin strips, sautee some onions and grn peppers, and a couple of slices of cheese melted on top

Now my mouth is watering and I haven't had lunch yet. Time to run next door to get some BBQ.
