Cake Truffles

So I made carrot cake and chocolate cake truffles. Thankfully I have mailed most of them out and some are going to neighbors. They are made with box mixes. I don't usually use a box mix but in this case they are ok. They taste ultra delish! I will be making these again. :)

Those look soooo yummy! I am not even going to ask how you did taht because I do not need to make any.

Well, just in case....bake a box cake mix, let it cool, crumble(fine crumbles) it in a large bowl, mix (by hand or spoon) in about 2/3 can of the canned frosting (I used cream cheese), mix all together. (It is a little messy but keep mixing and it will all come together) Roll into balls. Set on parchment lined cookie sheet or jelly roll pan so balls don't stick. Freeze for a couple of hours or overnite.

Melt chocolate (I use the melting wafers b/c they are usually a little thinner and easier to coat) I dip the ball slightly in chocolate to coat the bottom then place ball on fork and coat with another spoon of chocolate. Place on parchment lined pan to set up.

You can google & youtube them but this is the method I like. They are very easy, perhaps a little time consuming.
 
Sounds delish! My husband saw a recipe for these in a magazine and told me that I have to make them. I have made something similar, but with brownies and sweetened condensed milk. I may have to try it with my homemade buttercream. Where did you get the boxes?

I got the boxes at Hobby Lobby. I had matching paper liners they are sitting in but they don't show in the picture.
