I'd agree on quartz/granite counter top. Something light, not too busy.
Back-splash, agree with SD. Got to go. Might want to do some light grey, or white subway tile.
Might also want to look at painting the cabinets. I'm more of an oak/finished wood fan, but I realize that is considered "dated" these days. They look like they are an off-white, or "cream" color? Maybe something that contrasts with the counter top you go with.
Paneling, shag carpet and coppertone appliances are timeless.

I've noticed the last two times I've done laundry that after the dryer finishes (I think...maybe before it's done) that water is dripping from a spot in the ceiling where the vent pipe runs through. The exterior hole where the pipe exits isn't sealed very well at all. Is it likely the water is being caused by condensation due to the exterior vent hole not being sealed properly or is it likely a bigger issue?
