Yum!! Easy Manicotti!!

I love manicotti, stuffed shells, lasagna...........any Italian dish with marinara and ricotta cheese. All I had was about 6 lasagna noodles the other day so I cooked them almost done, not all the way. Cut them in 1/2 put in a spoon full of the ricotta cheese mix rolled them up and covered them with more marinara sauce. It was easy and delicious!!

I didn't know that. My ex is full blooded Italian, his mom taught me to make many yummy Italian dishes.

I'm not a fan of ricotta cheese, I can't handle the texture. :sick

I have used partially cooked lasagna noodles to make ravioli before. Now I buy wonton skins to make lobster ravioli
