Making my famous Shepherd's Pie for comfort dinner tonight,
great recipe to prep ahead and heat for a rainy day dinner :

1 small pkg. ground chuck, browned with
diced sweet onions and drained of grease...

Mix with following in casserole dish :

1 can of sweet green peas
1 or more cups of diced baby carrots (par boiled to soften)
1 small can tomato sauce
1 pkg. brown gravy mix

add spices / garlic to taste and small amounts
of water until you form a thick saucey mixture...

Top with a good layer of mashed potatos
bake in a 350 oven for about 40 minutes
and sprinkle top with cheddar in last 5 min...
 
Yum, that sounds good and I don't like loose ground beef. Do you cover it when you bake it?

The layer of mashed potato acts as a covering...

Some folks like to use stew beef but it really changes
the recipe because you then have to braise the meat...
 
I am going to try this.

I wasn't sure if the potatoes would get dried out or not.
