Rolling down the highway
Gamma asked me for this recipe so I thought I'd share. If you've ever eaten the potato casserole at Cracker Barrel, this is very similar. It's one of my favorites. I'm not a big fan of mushrooms so I use cream of chicken soup.
PARTY POTATOES
32 oz. pkg. frozen hash browns (slightly thawed)
1/2 tsp. salt
1/4 tsp. pepper
1/2 c. chopped onion
1 can cream of chicken soup (or cream of mushroom)
2 c. sour cream
1 c. grated cheddar cheese
1/2 c. butter
2 cups corn flakes, crushed
Mix first 7 ingredients together and place in a 3 quart casserole. Melt butter and mix with corn flakes. Put mixture on top of casserole last 20 minutes of baking time. Bake total of 1 hour at 350 degrees.
