Homemade Chinese

Okay, I pinned it. I've been really wanting to make some fried rice. For some reason, I haven't made it in years. I bet this would be good and the family would love it.

The rice is yum! And smells sooooo good while cooking! The chicken is time consuming, but worth it. LOL

Also, cook the rice the day before you're going to fry it. Neither time did I do this; it was still good, but I think it would have been better with day old rice.

When I used to make it frequently, I would use rice from the day before. I've heard the rice needs to be cold.
 
You two ladies are correct about the rice. After a day in the frig, it will dry out some which is needed for good fried rice.

Both times I remembered by early afternoon and tossed it in the freezer and fridge. But definitely will do it the day before.
