What is your favorite Easter or Spring dessert recipe ? ? ?



Cake, pie, pudding, coconut, carrot, strawberry... I need sum ideas.

Carrot cake, key lime pie, lemon pie (not my favorite, but my mom's), banana pudding, coconut cake or those fabulous key lime cupcakes from Bumblebee Bakery.

I haven't decided which one we are doing for Easter yet. One year we picked up a dozen cupcakes from Bumblebee and everyone was able to get their favorites.

I recently found Pillsbury key lime cake mix and key lime frosting at Walmart. It doesn't even compare to Bumblebee's, and not quite as good as my homemade (that my family said needed more key lime flavor) but it wasn't bad for a quick, summery/spring dessert.
 
We've had several cakes the past couple months... I am kind of leaning
towards a nice coconut cream pie, or a totally awesome banana pudding.

The nanner puddin' is ALWAYS an excellent choice. But the innards must be cooked custard, and the topping must be true meringue. None of this fake nanner puddin' stuff. Just sayin'...
 
Okay... I decided to go with a very simple coconut cream pie recipe:



Ham (Aldi's Special Premium Spiral Sliced Ham @ $1.99 per pound)
Potatoes, carrots, onions oven roasted in EVOO and balsamic vinegar.
deviled easter eggs
green bean casserole
brown soda bread




Whatcha havin fer your Easter dinner ? ? ?
