Chicken Breasts

I have a question for the cooking geniuses out there.

This summer I started cooking chicken breasts in a new way. I sear them on each side on the grill pan on top of my stove at high heat. This gives the nice grill marks. Then I bake them at 375 until they reach an internal temperature of 165 F.

The trouble is, the entire house fills up with smoke. My exhaust fan is one of those that runs the air through a filter, it doesn't actually exhaust. All summer, it's not a huge problem because the windows are all open (I don't have air conditioning), but I can see a problem coming in the winter.

Is there a way to reduce the smoke? Can I do something to my fan to help it filter? Is my furnace filter enough to reduce smoke in the winter?

Are you using an oil to sear them in? Have you tried lowering the temp? Some oils smoke more than others at higher temps.

Along the same lines as Madea ... what are you using to sear them with?

I've had a George Foreman grill, they are actually pretty nice IMO.

:thumbsup We have one and the in-laws have the huge daddy of one! It cooks a bunch at a time. I am still amazed how good of a job they do and in such a short time.

I have a Hamilton Beach indoor grill, it's awesome and very affordable. No smoke problem with it and I don't have a vent to the outside either. However; opening a window in the winter isn't a big deal in Georgia.

So, they also make cast iron grill pans that will leave the grill marks that you can use on top of the stove.

I've never used one of these but they seem pretty inexpensive:
